Cerusing:

Cerusing is technique used where the grain of the wood is opened up by scrubbing it with a metal brush. The wood is then stained and the grain filled with a contrasting pigment (usually white).

Oak and other hard woods are the best to ceruse as they provide the most noticeable results.
